The great emphasis on perfect aesthetics has played a key role in Japanese cuisine since time immemorial. How the food is served plays just as important a role as the perfect taste and aroma. Even in the kitchen, Japanese chefs are as demanding of the aesthetics of their knives as they are of their perfect functionality - especially extreme and long-lasting sharpness. The Japanese Shotoh knife with a 14 cm blade length from the Miyabi 5000 MCD series provides discerning professionalsprofessional and ambitious amateur chefs alike the perfect combination of functionality, perfect ergonomics and unique design.

Shotoh means "little knife" in Japanese and is known as "petty knife" in English, which comes from the French word "petit", meaning small.In Japan, this knife is considered one of the traditional knives and is one of the best-selling blade shapes, right after the Santoku knife.

The symmetrical blade is sharpened using the traditional Honbazuke hand technique. This involves three stages of grinding, sharpening and polishing along the entire length of the blade, ensuring an extremely sharp katana-type blade.

The core of these knives is made up of high grade carbide steel. This core is sheathed with 100 layers of two different hardness grades of steel to create a unique Damascene design. The special Japanese MC63 steel is enriched with cobalt, molybdenum and vanadium for increased blade hardness and durability. The high carbon content gives the knife extreme hardness - approximately 63 Rockwell degrees, for unsurpassed and long-lasting sharpness.

Theergonomic handle in the traditional "D" shape made of white birch wood adds a touch of uniqueness to each knife. The warmth emanating from the natural birch wood contrasts perfectly with the steel blade.The mosaic decoration on the blade gives the knife a distinctive touch and stylishly complements the oriental feel of the knife. The handle has a unique Miyabi logo on the metal base .
