Sichuan pepper Sichuan, 4 x 10 g - with floral and citrus notes

Thered Sichuan berries have a distinctive aromatic taste. Their floral and citrus notes (orange peel, bergamot) are perfect for savoury dishes made from duck, fish, pork and chicken. Sichuan peppercorns are great for spicing up chocolate desserts or fruit salads. We recommend grinding them gently in a grinder at the last minute and avoid cooking them, as they tend to become bitter. The aroma of Sichuan peppercorns can be enhanced by roasting the whole capsules. Only very small doses are used for seasoning, but avoid completely black capsules, which are strongly bitter

Sichuan pepper originates from Southeast Asia and is one of the oldest spices used in Chinese, Indian and Japanese cuisine. You may also know it as fagara. It is not a traditional pepper, but the dried red to black capsules of an acacia-like shrub called the yellow pepper tree. The flavour is lemony and peppery, very aromatic and not as hot as the classic pepper. In China, roasted crushed Sichuan peppercorns are used to spice green tea.
