The Japanese Miyabi 7000 D knives invite you to explore the traditional Asian art of knifemaking. Beauty and sharpness unite every kitchen knife in the Miyabi 7000 D series, including the Gyutoh knife, with a blade length of 24 cm.
TheGyutoh is considered a slicing knife in Japan, as it is mostly used for slicing meat into fine slices. The rounded shape of the blade means that it can be sliced with a swinging motion. In Europe, the Gyutoh is generally used as a very sharp all-purpose kitchen knife, which can be used to slice cuts of meat and vegetables.
The symmetrical blade is sharpened using the traditional Honbazuke hand technique. This is a three-stage grinding, sharpening and polishing process along the entire length of the blade, which ensures an extremely sharp katana-type blade.
The core of these knives is made of fine carbide steel. This core is wrapped with 65 layers of steel to create a unique Damascene design. Special Japanese CMV60 steel enriched with cobalt, molybdenum and vanadium for increased blade hardness and durability. The high carbon content gives the knife extreme hardness - approximately 61 Rockwell degrees, for unsurpassed and long-lasting sharpness.
Theergonomic handle is made of durable and tough micarta - a layered resin and flax fiber blend is low maintenance. The combination of wood-textured micarta and polished stainless steel elements is truly unique. The handle features a unique Miyabi logo on the metal base.
