One of the reasons for this is the perfect synergy between the exotic wood handle and the blade, which complement each other perfectly and create a harmonious whole. The blade's finish using the special Tsuchime metal-weaving technique emphasises the elegant oriental look.
Shotoh means "little knife" in Japanese and is famous in English for as "petty knife", which comes from the French word "petit", meaning small.In Japan, this knife is considered one of the traditional knives and is one of the best-selling blade shapes, right after the Santoku knife.The small knife with a blade of 13 cm is ideal for processing smaller pieces of food and for cutting or slicing fruits and vegetables.
The symmetrical blade is sharpened using the traditional Honbazuke hand technique. This involves three stages of grinding, sharpening and polishing along the entire length of the blade, ensuring an extremely sharp katana-type blade.
The core of these knives is made of high quality microcarbide steel and is sheathed with 2 layers of two types of steel with different hardness. The special Japanese MC63 steel is enriched with cobalt, molybdenum and vanadium for higher blade hardness and durability. The high carbon content combined with the special CRYODUR® freeze hardening technology gives the knife an extreme hardness of approx. 63 Rockwell degrees for unrivalled and long lasting sharpness.A metal-baking technique called Tsuchime creates a visually stunning and sophisticated look of textured surface.
