Zwilling Miyabi 6000 MCT Gyutoh knife, 20 cm

Aesthetics and functionality go hand in hand with perfect design. The Miyabi 6000 MCT series knives have an unsurpassed look and their first-class functional features will impress professionals and amateur chefs alike. One reason for this is the perfect synergy between the exotic wood handle and the blade, which complement each other perfectly and create a harmonious whole. The blade's finish using the special Tsuchime metal-weaving technique emphasises the elegant oriental look.

Gyutoh is considered a slicing knife in Japan, as it is mostly used for slicing meat into fine slices. The rounded shape of the blade means that it can be sliced in a swinging motion. In Europe, the Gyutoh is generally used as a very sharp all-purpose kitchen knife, which can be used to slice cuts of meat and vegetables.

The symmetrical blade is sharpened using the traditional Honbazuke hand technique. This involves a three-step grinding, sharpening and polishing process along the entire length of the blade, ensuring an extremely sharp katana-type blade.

The core of these knives is made of high quality microcarbide steel and is sheathed with 2 layers of two types of steel with different hardness. The special Japanese MC63 steel is enriched with cobalt, molybdenum and vanadium for higher blade hardness and durability. The high carbon content combined with the special CRYODUR® freeze hardening technology gives the knife an extreme hardness of approx. 63 Rockwell degrees for unrivalled and long lasting sharpness.A metal-baking technique called Tsuchime creates a visually stunning and sophisticated look of textured surface.

Theergonomic handle in the traditional "D" shape made from exotic Pakka wood is very comfortable to grip, not only for the workThe smooth lines, but also the perfectly smooth transition between blade and handle, gives each knife a sophisticated look. It balances the knife perfectly and allows safe and comfortable use without hand fatigue. The mosaic decoration on the blade gives the knife a mark of distinction and stylishly complements the oriental tuning of the knife. The handle has a unique Miyabi logo on the metal base.
