The Japanese Miyabi 5000 FCD knives invite you to explore the traditional art of knifemaking. Beauty and sharpness unite every kitchen knife in the Miyabi 5000 FCD series, including the Gyutoh, with a blade length of 20 cm.
TheGyutoh is considered a slicing knife in Japan, as it is mostly used for slicing meat into fine slices. The rounded shape of the blade means that it can be sliced with a swinging motion. In Europe, the Gyutoh is generally used as a very sharp all-purpose kitchen knife, which can be used to slice cuts of meat and vegetables.
The symmetrical blade is sharpened using the traditional Honbazuke technique. This is a three-stage grinding, sharpening and polishing process along the entire length of the blade and ensures an extremely sharp blade.
The core of these knives is made up of fine FC61 carbide steel, which gives the knife an extreme sharpness that it also retains for a long time. This core is wrapped with 48 layers of steel to create a unique Damascene design.
The knives are hardened with the improved Friodur® technology, which consists in freeze hardening the knives to become harder, more durable, more resistant to corrosion and retain their maximum sharpness for longer.
Theergonomic handle made of Pakka wood is very comfortable to grip, not only thanks to its smooth lines, but also thanks to the uniform transition between blade and handle.The mosaic decoration on the blade gives the knife a distinctive touch and stylishly complements the oriental decoration of the knife. Of course, the handle has a unique Miyabi logo on the underside.
